I’ve been hot on wraps for lunch lately and thought I’d share a few with you this month as the weather is warming up! I declare today, Wrap-It-Up-Wednesday! And while I show you how I “wrap it up” I thought I’d throw in a few of my current favorite photos just for fun!

Now, let’s WRAP-IT-UP!
I love a cool crisp lunchtime salad in the summer but something about wrapping it up in carbs makes me feel even better. Good carbs though! 😉
Wraps are an easy, versatile and healthy lunch that can be made ahead when necessary. To make things easy, I wash and chop up all of my veggies at once and place them in individual containers in the fridge. I have to make things as easy as possible when it comes to eating veggies and fruit. If I wait to prep until I’m hungry, I WON’T DO IT!
I used a 100% whole wheat tortilla but I also enjoy using Flatout Wraps.

And you know me… CHEESE! Feta cheese to be precise!
I’m all about just using what you have on hand. Wraps are a great way to use up odds and ends of leftover veggies. To this wrap you could also add a vinaigrette dressing, calamata olives and cucumbers. (I would have if they would have been in my fridge!)
This is the moment I realize I may not be able to roll this big thing up!
Somehow I secured it just long enough to snap a photo.
- 1 Whole Wheat Tortilla
- 2 Tbsp. Hummus (I used plain)
- 1/2 Chicken Breast, Grilled and Sliced
- Green or Red Leaf Lettuce
- 1 Tbsp. Chopped Red Onion
- 1-2 Tbsp. Feta Cheese Crumbles
- 1/8 c. Diced Tomatoes
- Shredded Carrots *optional
- Shredded Cucumber *optional (not pictured)
- Diced Calamata Olives *optional (not pictured)
- Vinaigrette Dressing *optional (not pictured)
- Spread the hummus onto the tortilla, then layer in remaining ingredients.
- Carefully tuck in the ends and roll up the wrap securing it with a couple toothpicks. Slice in half and enjoy!

Lauren, Do you leave your lettuce in the lettuce spinner in your fridge? Seems like I great place to I was just wondering. When I use mason jars I feel like the water/lettuce is left dirty.

I do store my lettuce in the salad spinner! I wash it, spin it and then drain the bowl… sometimes I even use a towel to make sure there is no water left in the bottom, then I just store it in the fridge. It stays fresh so much longer! I have the Oxo Good Grips brand of spinner and would highly recommend it! 🙂 Thanks for stopping by, Sara!
