Sometimes you just need more vegetables in your life!
I am one of those people who struggle to get in all of my servings. If I don’t plan ahead, wash and chop, then I won’t be eating them!
I really like this quick preparation for broccoli. It takes very little time, it’s light and delicious!
You start with some chopped broccoli and water in a skillet.
Give it a quick steam.
Add in minced garlic and crushed red pepper flakes (optional).
And finish it off with a little lemon juice for added freshness.
This is a nice, light side dish to serve alongside grilled chicken breast and couscous. We ALWAYS grill our chicken with a special seasoning (click here for recipe).
This meal is delicious, satisfying and good for the waistline! Doesn’t get much better than that!
Ingredients:
- 2 small broccoli crowns (and stems), chopped
- 1/2 c. water
- 2 Tbsp. olive oil
- 1/2 lemon
- 2-3 garlic cloves, minced
- salt and pepper
- Optional: dash or two of crushed red pepper flakes
Directions:
- Using a non-stick skillet over high heat, add water and broccoli and cover. Steam for a couple minutes or until bright green.
- Remove the lid and reduce heat to medium. Add oil and garlic (and crushed pepper if desired) in the center of the pan and allow the garlic to cook for a couple minutes, infusing with the oil. Then stir into the broccoli and cook until tender with the lid off (about 5-8 minutes).
- Remove from the heat. Add the lemon juice and season with salt and pepper to your liking.
