Quick & Light Lemon Garlic Broccoli

Sometimes you just need more vegetables in your life!

I am one of those people who struggle to get in all of my servings. If I don’t plan ahead, wash and chop, then I won’t be eating them!

I really like this quick preparation for broccoli. It takes very little time, it’s light and delicious!

Give it a quick steam.

broccoliwithgarliclemon (4 of 7)And finish it off with a little lemon juice for added freshness.

broccoliwithgarliclemon (5 of 7)This is a nice, light side dish to serve alongside grilled chicken breast and couscous. We ALWAYS grill our chicken with a special seasoning (click here for recipe).

Ingredients:

  • 2 small broccoli crowns (and stems), chopped
  • 1/2 c. water
  • 2 Tbsp. olive oil
  • 1/2 lemon
  • 2-3 garlic cloves, minced
  • salt and pepper
  • Optional: dash or two of crushed red pepper flakes

Directions:

  1. Using a non-stick skillet over high heat, add water and broccoli and cover. Steam for a couple minutes or until bright green.
  2. Remove the lid and reduce heat to medium. Add oil and garlic (and crushed pepper if desired) in the center of the pan and allow the garlic to cook for a couple minutes, infusing with the oil. Then stir into the broccoli and cook until tender with the lid off (about 5-8 minutes).
  3. Remove from the heat. Add the lemon juice and season with salt and pepper to your liking.
