Then, I peel and chop my sweet potatoes. The potatoes take the longest to cook, so I make sure to do this part first.
Next, lay out the sweet potatoes in a single layer on parchment paper on a large sheet pan.

Season The Potatoes and Roast
Then I season my potatoes right on the sheet pan – why waste more dishes?
I sprinkle my avocado oil and seasonings on top of the potatoes and give them a little massage. You can toss them if you prefer!
Into the preheated oven they go for about 20 minutes. Then flip the potatoes and resume baking for another 15–20 minutes, until golden and slightly crispy.

Cook the Taco Beef
Once the potatoes are in the oven, I start browning my beef. In a skillet over medium heat, cook ground beef until browned and fully cooked. Drain if needed, then stir in seasonings to taste.
Now would also be a good time to start rice in the InstaPot if doing so.
