This fresh and beautiful kale salad is simple to throw together and packed with flavor and nutrients to kickstart your healthy habits this spring!
So I must confess, although I had great intentions for my… uh, new “healthy habits” in 2018… my efforts were less than impressive in January. Just being honest.
Does it count for anything that I consumed A TON of healthy cooking YouTube videos while stuffing my face with leftover Christmas treats?
Good, I thought so…
I did manage to eat my way out of most of the leftover goodies in the house (I applaud anyone that can actually toss that stuff in the garbage after Christmas) and I began to compile some healthier recipes for my future meal plans.
One YouTube channel I am obsessed with right now is The Domestic Geek! She has amazing recipes and makes eating healthy much more appealing to people like me who LOVE. TO. EAT!

Without further ado, this spring kale salad was largely inspired by one of the recipes I saw on her channel! I changed up my dressing a bit, swapped out a few items and added goat cheese! Which I LOVE!
I hope you will give it a try soon! I feel better about myself eating this beautiful kale salad for lunch over any more comfort food! COME ON SPRING!
Spring Kale Salad
Ingredients: (For One Serving)
- Chopped Kale, about 1 cup
- 1/2 c. Apple, chopped
- 1/2 c. Grapes, halved
- 2 Tbsp. Cranberries
- 2 Tbsp. Almonds, sliced
- Goat Cheese, crumbled
- 1/3 c. wild rice or brown rice (optional)
Dressing:
- 1-2 Tbsp. Olive Oil
- 1 tsp. Dijon Mustard
- 1 tsp. Apple Cider Vinegar
- 1 tsp. Honey
- Salt & Pepper to taste
- Dash of Garlic Powder
Directions:
Whisk together the dressing ingredients. Toss the kale into the dressing and massage the kale into the dressing until it begins to soften a bit and is completely coated. Toss kale into a salad bowl with the remaining fruits and nuts. Top with crumbles of cheese. Enjoy!
Healthy and perfect for warmer weather! (Over here crossing my fingers for sunshine!)
Massage the kale into your dressing and top with some rice.
Add chopped apples, grapes, almonds and cranberries!
