It’s Wrap-It-Up-Wednesday again! This month I’m bringing you a new wrap recipe every Wednesday so be sure to keep checking in!
While we “wrap-it-up” each week I want to also share with you a recap of current events.
First of all, I’M AN AUNT…AGAIN! 🙂
Demi Belle was born on June 3rd. She was about 20 days early and though mom and baby both experienced a complicated labor, I’m relieved to say both are doing well now and are at home! Prayers answered!
She is absolutely beautiful and tiny!
This past weekend we took a road trip to a good friends wedding out in Kansas. It was our first mini vacation with baby and Ren’s first wedding debut!
He was pretty hunky in the tie I made him!
After babies, weddings and road trips I think Ren says it all in this photo. We were pooped out!
I couldn’t believe he fell asleep in his highchair! Haha!
WRAP RECIPE THIS WEEK:
I’ve been into wraps for lunch lately as the weather is (finally) warming up. Last Wednesday I posted my recipe for a Greek Chicken Wrap. You can find it here.
Today I present to you… Spicy Turkey Avocado Wrap!
This may just be my favorite so far! It hit the spot!
I spread a chipotle hummus onto a whole wheat tortilla.
Then topped with red onion, lettuce, shaved turkey, avocado, cucumber and tomato.
Bright, fresh, flavorful and HEALTHY! 🙂
And this is usually how my wraps end up. Oops!
Delicious though not very pretty!
Whether or not I have to eat the ingredients off of my plate or in a wrap, this was a delicious lunch!
Be sure to pin it!Â
- 1 Tortilla (100% Whole Wheat)
- 2 Tbsp Chipotle Hummus
- 4-5 Slices Shaved Turkey Breast
- 1/2 Avocado, Sliced
- 1/4 c. Tomato, Diced
- 1/8 c. Cucumber, Diced
- 2 Tbsp. Red Onion
- Lettuce, Green or Red Leaf
- Spread hummus over the tortilla and layer with remaining ingredients.
- Fold in the edges and roll up, securing with toothpicks.
- Cut in half if desired and ENJOY!
