Happy Friday Friends!
Has your week been productive? I’ve been asking myself this question a lot lately. Seems like my to-do list only grows and so much of it is still left on Fridays which leaves me feeling like I need to work all weekend! I hate that feeling!
Today was much of the same. I spent a good amount of time singing Christmas carols and dancing my baby boy around the room to get him to settle down and sleep. Productive? I guess it just depends on how you look at it. I wouldn’t trade those moments for the world!
Can’t believe it’s already Friday! Last weekend we were celebrating the beginning of open season. Deer season is somewhat of a Holiday for the Morans. Family travels in for the week and Dan’s parents have a big get-together for the entire neighborhood Saturday night. All the hunters and their families come at dark for dinner and to share the hunting stories of the day. I found the event extra cozy this year as it was freezing and snowy! It just made the soup, beans and chili taste all the better!

Sunday the weather man kept saying we would get a “dusting” of snow.
Maybe our definition of “dusting” is different…
It snowed much of our Sunday. Never thought it would snow before our house was completely finished but here we are.
Sunday evening Dan got a nice eight-pointer! It sure was a cold night to be out but getting a buck made it worth it for him!
Ren was sad he couldn’t go hunting during his first deer season. He soon learned that cuddling with momma by the fire was much more relaxing. He sure did look cute in his camo though!
As much as I hated the bitter cold last weekend, the snow still left me mesmerized. The first snow every year is so exciting! It’s almost as if I have never seen it before. So beautiful! (Don’t remind me of this come March when it’s still snowing!!! Ha!)
Cold weather brings cozy recipes into my kitchen. This week I threw together a super-easy “taco chili” and thought I’d share it with you for your next snow day.
- 1 lb ground beef, cooked and drained
- 1/2 sweet onion, chopped
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 1 can chili beans (do not drain)
- 1 (8oz) can tomato sauce
- 2 (14oz) cans diced tomatoes with green chiles (do not drain)
- 1 package taco seasoning
- 1 Tbsp sugar
- 1/2 c. water (added to taco seasoning and meat)
- 1 c. additional water
- Optional Toppings: shredded cheese, tortilla chips or chili cheese Fritos
- Cook the ground beef and onion, drain
- Add the taco seasoning and water as directed on package to the meat.
- Combine all ingredients in a slow cooker.
- Cook on low for 6-8 hours or on high for 4 hours.
- Top with shredded cheese, greek yogurt (sour cream) and tortilla chips.

I ate the chili topped with shredded cheese, sour cream and tortilla chips. I also ate it for lunch the next day switching out the chips for chili cheese Fritos. It was delicious!
