Hello friends!
So it’s Friday?! This week has flown by with the holiday on Monday!
Things have been so busy around here as we are (fingers-crossed) getting ready to start on our house renovations as early as next week! Dan and I worked hard this past weekend to transplant tons… I mean TONS of flowers so we can dig our basement without sacrificing them. I’m a little worried they won’t survive the move, but it was worth a shot!
This weekend we’ll be at it again, moving more so we can be ready for our new, extended foundation! I’ll have to post along our journey from start to finish (stay posted until 2020 – haha! Is a home ever really “finished”)
Anyway, I wanted to stop in and share an awesome new recipe with you!
The other day, while eating lunch, I watched the end of 10 Dollar Dinners with Melissa D’Arabian (yes, I eat food and watch food at the same time, okay). She made a spicy kettle corn and after watching I couldn’t help but try it myself!
It’s a pregnancy thing, I think. Once you crave something, you HAVE TO HAVE IT!
So I decided to alter the recipe slightly to make it more traditional, sweet and salty, my kind of kettle corn!
Here’s how it went:
I gathered the ingredients. I had to move fast during this recipe (notice not many photos during the process).
Heat oil and a few test kernels until they pop. Reduce heat to medium, add butter, popcorn and then sugar. Lid on…
Shake, shake, shake…
Shake, shake, shake…
Shake your booty popcorn…
It popped! Then I removed it to a bowl and topped it with salt and some extra sugar.
Because everything is better with a little sugar on top!
Note: the paper towel wasn’t really necessary. I was worried it would be messy but it wasn’t!
Always important to taste as you go!

The greatest part about this recipe is that you most likely have all the ingredients in your kitchen already! It was a super-fast way to get something I was craving, without spending a dime!

- 1/2 c. Popcorn, uncooked
- 3 T. Sugar
- 3 T. Butter
- 2 T. Vegetable Oil
- Salt & Extra Sugar To Taste
- Use a medium/large pot with a lid. Add the oil to the bottom and heat to high heat. Place a couple kernels in the bottom of pan.
- Once the “test kernels” pop, toss in the butter and reduce heat to medium. When butter is almost melted add in the popcorn and sprinkle all the sugar over the popcorn. Cover with lid and move/shake back and forth over the heat.
- Popping should begin and last about two minutes. When there is more than three seconds between pops, the batch is done. Do not over-cook because it will burn quickly!
- Remove onto a platter or into a bowl. Sprinkle with salt and extra sugar to fit your tastes!
- ENJOY!
