PICO AVOCADO DIP
I made this dip on Mother’s day. It is such a treat!
I absolutely LOVE avocados so that addition to pico de gallo is a no-brainer for me!
Best served chilled with a cold Dr. Pepper!

Pico Avocado Dip

Serves: 4-6
I really don’t measure on this recipe! You can just add ingredients to fit your taste! You can make this dip ahead of time, just exclude the avocado. It’s even better after marinading awhile anyway!
Ingredients
- 5-6 Roma Tomatoes, chopped
- 1/2 Small Red Onion, finely chopped
- 2 Tbsp. Fresh Cilantro
- 2 Avocados, diced
- 1 Lime, juiced
- Salt & Pepper, to taste
- 3/4 c. Frozen Corn, thawed (use fresh from the garden later this summer!)
Instructions
- Chop and dice as recommended above. Add all ingredients into one bowl (excluding the avocado) and toss.
- Chill until ready to serve. Just before serving, add the avocado and toss once again.
- Serve with tortilla chips! Also great on tacos or fajitas!
