Makeover Your Leftovers: Pot Roast Turned Cowboy Stew

As I mentioned yesterday, I wanted to share a good way to makeover your leftover crock-pot roast…that is, if you had any left-overs. Dan and I can eat a lot of roast and potatoes but that batch seemed enormous! So instead of eating roast for lunch and dinner… and lunch and dinner… breakfast, lunch and dinner… just to finish it off, I decided to change it up a bit. (AND, just to be clear… we never actually ate roast for breakfast, ha!)

I chose to give the roast new life with a little trick I believe I picked up from my mother-in-law (if so, thank you Cindy!). By simply adding a few extra ingredients we had a new dish at the dinner table.

Cowboy Stew – With Roast & Veggies

Leftover Makeover: Cowboy Stew from Pot Roast

Have leftover pot roast and potatoes? Change it up with this stew recipe
Ingredients
  • Leftover Pot Roast (See Easy Crock-Pot Roast and Veggies @ Rustichoney.com)
  • 1 can Corn (could also use frozen or fresh), drained
  • 1 can Diced Tomatoes, with juice
  • 1 can Green Beans, drained
  • 1/2 packet Au Jus Gravy Mix
  • 1 1/2 c. Water
Instructions
  1. Take the leftover pot roast and shred the rest of the meat and remove any fat or bones left in the pot.
  2. To the leftovers, add the corn, tomatoes, and green beans
  3. Then, take half of a packet of au jus gravy mix and whisk it into the water (half of my packet called for 1 1/2 c. water) – Add a small amount of water into the mix to dissolve all clumps. Then add the rest of the water and stir.
  4. Add au jus gravy to the pot and stir everything together
  5. Place pot back into the slow cooker and reheat or reheat on stove-top.
Notes
This type of dish would also be perfect for the freezer! Pull it out on a chilly night later this fall and dinner is already done!

Side note: cold pot roast is not nearly as pleasing to the eye!

Add a small amount of water into the mix to dissolve all clumps. Then add the rest of the water and stir. Add au jus gravy to the pot.

Give everything a good toss.

Place pot back into the slow cooker and reheat. You could also simply heat this stew on the stove.

If our stove was up and going, I might have even paired this meal with drop biscuits! YUM!

This type of dish would also be perfect for the freezer! Pull it out on a chilly night later this fall and dinner is already done!
