I knew this post was going to make me hungry. Maybe that’s why I’ve been neglecting to post lately.
No. That’s not it.
Things have just been a bit busy. I’m sure you know ALL about that too!
Wake. Work. Eat. Eat More. Work. Sleep. Or Don’t. Coffee. Repeat.
Sometimes when I’m completely stressed out or having a horrible day, I just make a little time to bake something. I don’t care what time of day (or night) it is. I find baking to be therapeutic.
Or maybe eating the baked goods is the therapeutic part. Not sure, but either way it works for me!
One of my favorite things to bake AND EAT are my grandmother’s cinnamon rolls. They are the best! Especially when she makes them! Why is it that recipes always taste better when made by grandma’s hands?!
With her permission, I’m sharing this recipe with you today. I asked her if she was okay with me sharing the recipe and she just giggles humbly as if her baking is no big deal. Well Grandma, it’s a big deal to me! 😉
I guess recipes were just meant to be shared! <3
Grandma’s Cinnamon Rolls
By: Grandma Jackie (read more about my grandma here.)
Ingredients:
- 2 1/2 c. Warm Water
- 2 packages Yeast
- 1 Yellow Cake Mix
- 5 to 5 1/2 c. Flour
- Brown Sugar
- Cinnamon
- Butter or Oleo
Directions:
- Dissolve yeast in water. Add cake mix and flour. Knead the dough on floured board or cabinet. (I cheat sometimes and use a dough hook attachment on my kitchen aid mixer. My grandma would probably laugh at that too!)
- Dough will be on the thin side… just thick enough to handle. Place in a greased mixing bowl and let rise and double (about 1 hour)
- Roll out the dough to 1/4” thickness. Spread generously with melted butter (or oleo like grandma), brown sugar and cinnamon. I always just eye-ball the measurements but be generous!
- Roll as for jelly roll and cut into 1/2” slices.
- Place on greased baking sheet – DO NOT CROWD! – Sides barely touching.
- Let rise another 15 minutes.
- Bake at 350 degrees for about 20-30 minutes until cooked through – DO NOT OVERBAKE!
- Spread frosting on the rolls while still warm! (Find my cream cheese frosting recipe here.)
- OMG! I can almost taste them already! Enjoy!
