In the middle of the night, I awoke many times to the loud cracks of thunder. Lying there startled, I grabbed my iphone to check the radar.
Another bright flash of light cast shadows across our bedroom… and subconsciously I started to count…
One Mississippi…two Mississippi…three Mississippi…
I made it to eight before the loud thunder cracked again. I knew the storm was still about 8 miles away. I remembered in that moment all the little things my dad has taught me over the years about the weather. Things my grandpa has passed down from life on the farm with his father.
I willl never forget all the little stories he has handed down to me. I enjoy learning about the farm, its history… and the days before iphone radar. It is all still amazing to me!
My dad’s birthday was this past week and I made him… (rephrase: I attempted to make him)… his favorite cookies. He recently brought this recipe card to my attention for my grandma’s Blonde Brownies. Of course, I took it without hesitation! I stored it away for a few months and then decided it would be the perfect birthday surprise!
I was a little confused on what kind of chocolate and nuts she used in her recipe. I improvised and decided white chocolate made sense with it being “blonde” brownies and I decided on cashews because they are my dad’s favorite!
I knew, no matter what I put into these brownies, my dad would love them. He is a real-life cookie monster (now you know where I get it!)
White Chocolate Cashew Blonde Brownies
Ingredients: (varies slightly from above photo)
- 1 c. brown sugar
- 1/3 c. butter (or shortening)
- 1 egg
- 1 tsp. vanilla extract
- 1 c. flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. cashew pieces and halves
- 1/2 pkg. white chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Melt the butter over medium heat in a saucepan. Add the brown sugar and stir until combined into a syrup. Remove from heat and cool.
- Once sugar/butter mixture is cool, add the egg and vanilla and combine.
- Slowly add in the remaining dry ingredients (excluding nuts and chocolate)
- Fold in the chocolate chips and nuts.
- Spread in a 9×9 greased baking pan.
- Bake at 350 for 18-20 minutes (I like slightly gooey brownies!)
Makes 9-12 servings. Best served warm with ice cream on top! Change up the chocolate and nuts for different variations!
We loved these brownies so much! Dan even said “This might be the greatest cookie I’ve ever had!” – BIG STATEMENT! He comes from a great cooking family so I know he has had some gooooood cookies!

Hope your dad had a Happy Birthday! Those look so delicious, as I have had many brownies/and blondies, but never tried them with cashews..Can’t wait to try! (the picture in the corn field is so great!)
