  • 5-6 Roma tomatoes, chopped into bite size pieces
  • 3/4 medium red onion, finely chopped (yellow or sweet onion works too)
  • 1 jalapeño, finely chopped (fresh is best; jarred works too—omit for mild pico)
  • 1 large lime (zested and juiced)
  • ¼ cup fresh cilantro, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1 clove garlic, minced (optional)
