I’m here! I’m back!
Sorry for going MIA last week. A little bug finally made it into our household and boy did it get the best of us! After weeks of dodging the flu from our extended family and friends, or so we thought, it managed to find us.
It’s crazy how far behind a gal can get when she’s laid up for two full days! A week later, I still feel like I’m playing catch-up! But being sick definitely reminds us of what is truly important on our to-do lists. Only the priorities get done and that is quite alright!
The good news is we are all better and food sounds good again! Yay! Therefore, I thought I’d share a quick meal idea with you!
Skillet hash is an easy weeknight meal your family will love! Moms love it too because it’s EASY.
The most complicated part of this entire meal is chopping.
If that is too much, just do all the chopping beforehand or make this a freezer meal if you need to!
I usually make a lot of this and we eat leftovers for our lunches. You need a HUGE skillet to do all of this at once! Or just split it up like I did here and it cooks faster. I’m always about “fast” when it comes to weeknight meals these days!
A little oil, seasoning and steam. Not too many ingredients… not too much thought.
Hash is so flexible; there are no rules! Throw in things as you chop them and use what you have on hand!
Ingredients:
- 1 pkg. Smoked Sausage (I used a turkey/pork/beef sausage – fully cooked)
- 1 Green Pepper, chopped
- 1 Small Onion, chopped
- 4 Small Russet Potatoes, chopped
- 2 Sweet Potatoes, chopped
- 1/2 c. Frozen Corn Kernels
- 2-4 Tbsp. Oil (I use vegetable or canola oil for this recipe but you can substitute what you like)
- 2 Tbsp. Water
- Bill’s Seasoning or your favorite all-purpose seasoning, to taste (my recipe here)
- *OPTIONAL: Toss in more veggies like carrots, squash, zucchini, etc. Just time them out so they don’t get too mushy!
Directions:
- Chop all the veggies and meat.
- Heat your non-stick skillet over med/high heat and drizzle with oil. Add in the potatoes first and toss. After a couple minutes, add the water and cover to steam the potatoes. This makes the recipe come together much faster!
- Toss in the onion, bell pepper, sausage, corn and seasoning. Add more oil if necessary. Let the mixture cook down and begin to caramelize, stirring occasionally. Again, covering the skillet will speed up the softening process (like if your kids are already starving and you need dinner done ASAP! Haha!)
- Cook until potatoes are soft. The mixture will be slightly caramelized and the edges of the sausage browned. (Keep in mind I used a fully-cooked sausage!)
- Serve it up and enjoy! Let the kids dip the potatoes and sausage in some ketchup and watch them clean their plate… well except for the onions maybe! 😉
