It is a beautiful, rainy weekend here at the farm. I can hear a steady pitter-patter of rain falling on the roof above me as I sit quietly in my upstairs work room.
Rainy Sundays always remind me to be thankful for my many blessings. Days like today, force us to slow down, relax, and take in our surroundings. We prayed for weeks to see rain and our prayers have been answered. Look around today and take in all of your blessings.
I wanted to share a really easy recipe that would be perfect for a rainy day. Although, I am not sure that what I’m about to share with you even constitutes the name “recipe” but this is my blog and I am approving this post, HA!
If I told you I could make cookies with only two ingredients, would you tell me I am crazy or be my best friend?
That is what I thought, friend! And since friends share…here you go!
Easiest Cookies Ever
Ingredients:
- 1 Box Cake Mix (Choose your favorite flavor. I really liked confetti cake)
- 3/4 Can Sprite (Or Sprite Zero in this case)
Directions:
- Pre-heat oven to 350 degrees.
- In a medium bowl, stir together the cake mix and 3/4 can of sprite. You can add sprite until you get desired cookie dough consistency.
- Drop the batter by the spoonful onto a greased baking sheet.
- Bake for 8-10 minutes. NOTE: It is important not to over-bake these cookies as they will become hard. They will not turn golden when done baking like the typical cookie would. They will be fluffy when done. You can insert a toothpick and if it comes out clean, they are ready.
- Allow to cool. Add icing if desired.
Makes about 12-18 cookies (depending on size of spoonfuls)
Keep this recipe on hand for rainy days! I tried this when I had to make a quick dessert and didn’t have any ingredients in my kitchen. To complete the cookies, I added cream cheese frosting and fruit for mini dessert pizzas! Be creative with these cookies!
