Life is simply better with bacon.
I had planned on sharing a chicken salad recipe with you today for Wrap-It-Up-Wednesday but I decided it wasn’t really all that exciting. Why share a recipe that I don’t absolutely LOVE.
Then it hit me. BACON = LOVE
So I reconfigured my lil recipe, wrapped it up and snarfed ‘er down! It took all the will power I had not to go back for seconds!

Sleeping Beauties (aka: Daylilies)
I woke up early Saturday morning and was able to sneak out of the house while my boys were still in bed. Mind you I have to be really early to beat my husband out of bed!
We have so many daylilies right now! They surround our house, the garden, our roads… they are EVERYWHERE!
I love how they “sleep” once the sun goes down at night and then bloom again during the day.
It was a mighty pretty sight at sunrise! Just me and a few rabbits (I caught them picking through the strawberry patch!)
And finally around noon the daylilies are back in full bloom! So neat!
Wrap It Up: Chicken Salad Wrap With Apple & Bacon
Phew! I know that title is a mouthful but so is this filling wrap!
Okay so this wrap may have a few more calories than the other ones I’ve posted this month. But it still has some healthy highlights!
Grapes, apples, whole wheat wrap with flax seed, lettuce, chicken, greek yogurt… I feel that as long as the healthy ingredients outweigh the bad, I’m on the right track. 😉

- 1/3 c. Mayo
- 1/3 c. Greek Yogurt, Plain
- 1 Tbsp. Apple Cider Vinegar
- 1/2 tsp. Honey
- Salt & Pepper
- 3 Small Chicken Breasts, Cooked & Chopped
- 3/4 c. Red Grapes, Halved
- 3/4 c. Granny Smith Apple, Peeled & Chopped
- 1/8 c. Pecans, Halved (toasted if you prefer)
- 2 Strips of Bacon, Cooked & Crumbled
- *For Serving: Flatbread Wrap (100% Whole Wheat With Flaxseed) and Lettuce (Spring Mix)
- Combine the first five ingredients through salt and pepper to create the dressing.
- Then toss in the chicken, grapes and apples. Refrigerate.
- Before serving toss in the bacon and pecans.
- To assemble a wrap, top the flatbread with a bed of lettuce, then layer on the chicken salad mix. Fold in the ends and roll up, securing with toothpicks. Cut in half if desired and enjoy!
