Snow Day!
We finally got some snow around here! And it has been bitter, bitter cold so it has been a pretty winter scene all week and school has been out in our area. These pretty white scenes don’t seem to last long these days so I took advantage of it, bundled up our kids and let them sled for a few minutes around the house. It was far to cold to play outside for very long!
“Holy moly it’s cold out here… I can’t feel my face!”
Ren loves to bundle up and do chores with daddy so he was ready to go. Roric on the other hand was wondering what the heck we were doing and why he was dressed so ridiculously in those large layers!
Papa even got in on the sledding action!
Roric had to try out his new sled he received at Christmas!
It was almost nap time, can you tell?! haha!
The sledding only lasted minutes but I’m so glad I got my camera out to capture these adorable little moments!
I have to say, I look forward to snow days… especially cozy ones like this!
This week I’ve been sipping extra coffee, shuffling to my shop in muck boots, and trying to avoid errands at all costs! I feel beyond blessed to work from home this week! <3
On freezing cold snow days I also love to bake! So I thought it would only be fitting to share a quick recipe with you this week for some caramel pecan monkey bread minis! I’ve made these for my shop visitors on Second Saturday’s and they were devoured! I hope you will enjoy them as well!
Caramel Pecan Monkey Bread Minis:
- 2 cans biscuit dough
- 1 c. Sugar
- 1 tsp. Cinnamon
- 1 stick butter (1/2 cup)
- 1 c. Brown Sugar
- 1 tsp. Vanilla
- 1/2 c. Chopped Pecans
Directions:
- Cut each biscuit into eighths and roll into white sugar & cinnamon to coat.
- Place the pieces loosely into muffin tins (I used cupcake/muffin wraps)
- Heat the butter over low heat, melt in the brown sugar, then stir in the vanilla off the heat.
- Pour the butter mixture over each muffin and sprinkle with chopped pecans if desired.
- Bake at 375 degrees for about 14-15 minutes (according to your biscuits directions)
Note: You can bake in muffin tin and then flip them upside down as for typical monkey bread. In that case, I would sprinkle the pecans into the muffin tins before adding the biscuit pieces. To keep these more portable I baked in wrappers. They are gooey and a bitty messy but so worth it! YUMMY!
I would also recommend adding a drizzle of cream cheese frosting to the top for extra decadence!
