As I put Ren down for his afternoon nap, I take a deep breath and try to intake as much of his sweetness and stillness as I can. He is growing so quickly and it seems like life has really started to speed up in the last few weeks…or at least it feels that way coming out of our winter hibernation.
Already I watch as my calendar slowly fills up with happenings every weekend! Barbecues (our term for “dinner parties” around here), baseball games, weddings, birthday parties, family gatherings… they are all starting to pop up! And for the moments in between I begin to make a lengthy list of projects for our home.
As excited and thankful as I am for all of these events and a new found energy in my life, I do find myself clinging to winter days of coziness and quiet. I’ll miss snow days with my boys, working on projects inside, snuggling by the fire and not feeling guilty about it. For some reason I call that “rest” in the wintertime and “lazy” when the sun is shining!
The rainy days of April have given me a chance to cling to some of my “resting.” As a farmer’s daughter, I ALWAYS appreciate a good rainy day! And every good rainy day deserves a cozy meal!
Today I want to share my BBQ Meatloaf recipe with you. This recipe was born from my family’s BBQ Meatball recipe. The topping is the best! You’ve gotta try!
The best recipes begin with one big bowl!
Toss in all the ingredients and press into a casserole dish.
Next, mix together the sauce. Ooey, gooey, tasty sauce!
Spread it all over the top – no worries, it will be thick but perfect… trust me!
Bake at 400 for about 50 minutes or until cooked through.
Check on your child, sneaking in an evening cat-nap!
Still asleep… onto the potatoes and onions! No recipe here, just chopped potatoes and onion thrown into a skillet with a little oil and all-purpose seasoning. Gotta love some good taters! 🙂
Serve it all up with a salad and there you have it!
Delicious, BBQ-style meatloaf!

- Meatloaf:
- 2 lbs Ground Beef
- 1/2 c. Milk (whatever you have on hand)
- 3/4 c. Oatmeal (regular oats)
- 2 Eggs
- 1/2 tsp. pepper
- 1 tsp. salt
- 1 tsp. Onion Powder
- 1/2 tsp. Garlic Powder
- 1 tsp. Chili Powder
- Sauce Topping:
- 1 1/2 c. Ketchup
- 1/2 c. Brown Sugar
- 1 Tbsp Liquid Smoke
- 1/4 tsp. Garlic Powder
- 1/2 tsp. Onion Powder
- Mix together all ingredients for the meatloaf and press into a casserole dish (I used an 8 x 11 but a 9 x 9 works great too!)
- Mix together the sauce and pour if over the top of the meatloaf
- Bake at 400 for about 45-50 minutes or until cooked through.
