Pico Avocado Dip

Pico Avocado Dip

Is everyone gearing up for the three-day-weekend ahead?!

If you will be grilling out this weekend, I have the perfect appetizer for you!

I have a teething baby on my lap so let’s get to the meat veggies of this post! And QUICK!

I made this dip on Mother’s day. It is such a treat!

I absolutely LOVE avocados so that addition to pico de gallo is a no-brainer for me!

Best served chilled with a cold Dr. Pepper!

A very happy Mother’s Day it was for this gal right here!

Prep time:
Total time:

Serves: 4-6

I really don’t measure on this recipe! You can just add ingredients to fit your taste! You can make this dip ahead of time, just exclude the avocado. It’s even better after marinading awhile anyway!
  • 5-6 Roma Tomatoes, chopped
  • ½ Small Red Onion, finely chopped
  • 2 Tbsp. Fresh Cilantro
  • 2 Avocados, diced
  • 1 Lime, juiced
  • Salt & Pepper, to taste
  • ¾ c. Frozen Corn, thawed (use fresh from the garden later this summer!)

  1. Chop and dice as recommended above. Add all ingredients into one bowl (excluding the avocado) and toss.
  2. Chill until ready to serve. Just before serving, add the avocado and toss once again.
  3. Serve with tortilla chips! Also great on tacos or fajitas!

Hope you all enjoy!

  1. I need to make this as it has some of my favorite things in it! Maybe this weekend for “cowboy”
